The Breadman Ultimate makes and bakes most kinds of yeast bread--white, whole wheat, rye, honey banana, or crusty French--as well as quick or batter breads. Try the recipes in the booklet or your own favorites--just be sure the dry ingredients total less than about 5 cups so the dough doesn't overflow the 9-1/2-inch (nonstick) baking pan. If your recipe calls for adding ingredients late in the kneading cycle, there's a tray to hold and automatically dispense them. If you want to make bread that doesn't conform to the loaf shape, the machine can mix and raise the dough prior to shaping for baking in a conventional oven.

For the beginner the process couldn't be easier, and even if you're an old hand at making bread from scratch, you'll find yourself baking much more frequently. And this machine quickly pays for itself: think of how many $3 or $4 loaves you won't be buying over the bread maker's lifetime! I was impressed with the imposing stature of the Breadman Ultimate when I had it. It baked one successful loaf of whole wheat bread and one unsuccessful loaf of zucchini bread that were both made from recipes in the instruction manual accompanying the machine, and then it shorted out and wouldn't come on when plugged in. I returned it receiving a full refund, a ten dollar consolation promotional gift, and all shipping charges.

The machine is built too tall to be convenient when on a standard height counter top. It may be okay on a lower cart or buffet. I'm not sure why it went on the blink, but if it hadn't I probably would have kept it. As it was, I decided to purchase the Zojirushi BBCC-X20 and am supremely glad I did. The panel display is conveniently slanted as is the viewer window making working with it so much more enjoyable. I had originally thought that I would prefer the one kneading paddle design such as the Breadman Ultimate has, but have found the small indentations of the Zo to be barely noticeable. Also, since I use whole grain flours almost exclusively, the dual paddle design will likely be better since it can withstand the rigors of whole grains better.

I have used this machine for a year. Everything is good except the kneading paddle. This is an aluminum paddle driven by a stainless steel shaft. The paddle worn out in a few months and became very loose. Some users noted black grease at seal area, I think that's aluminum power mix with the dough. The non-stick coating on the tip of the paddle worn out too. I do put walnut and oatmeal in my bread. If you make only white bread you may not have the same problem. Next time I will look for a bread machine with stainless steel paddle and no coating.

My Breadman replaced my Zojirushi, which finally wore out after about 9 years of loyal service. The Breadman makes a smaller loaf, and I am still tinkering with recipes, but it has some nice advantages. It keeps kneading when you open the lid, so you can scrape down any stuck flour and make sure it mixes in. This also makes it possible to adjust the consistency of the dough (part of the learning curve). There are dozens of settings, and the instruction book is reasonably well written. No regrets here, except for having to tweak all my old Zojirushi recipes.

This is my 3rd bread machine; it was the least expensive and the best. It is a wonder; it make a perfect loaf of 100% whole wheat bread every time, I use organic golden grain wheat that I grind fresh for every loaf. Pauline M. Adamson, Red Lodge, Montana
